Coarse or fine: which gray salt?

Coarse sel gris is for pasta water, brining and roasting. It dissolves slowly and seasons deeply. Fine gray is stone-ground for everyday cooking and the table. Both are unrefined, hand-gathered in Guérande, and naturally rich in trace minerals.
